Well, I'll be the first one to admit that listening to my mom's, what I considered at the time mean rule, was never easy for me. Shh, don't tell her that I'm guilty to this day of sneaking in a few licks hear and there when her back was turned.
Consequently, now I can freely shove all the cookie dough in my mouth that I desire with this vegan recipe. These are my new all-time favorite cookies.
It's a vegan recipe that my roommate and I originally found online. However, we have baked them so many times now and sometimes are out of certain ingredients called for in the recipe that we have been forced to play around with these cookies just a bit. Sometimes creating a non-vegan concoction but ultimately we whip up a healthier version with our substitutions too!
Here is the original recipe:
- 1/3 cup peanut butter
- 2 Tablespoons canola/vegetable oil
- 1 cup of sugar
- 1/3 cup of nondairy milk
- 1 teaspoon vanilla
- 1 cup flour
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 cup of rolled oats
- 1/2 cup or so of vegan chocolate chips (I use Ghiradelli semi-sweet)
- Preheat oven to 425 degrees.
- Mix the peanut butter, oil, sugar, nondairy milk and vanilla together.
applesauce for the oil.
whole wheat flour for the regular flour (that's why they appear a little darker in the above photos).
Last night, I didn't have nondairy milk, regular salt, vanilla or baking soda in my house at school (never as complete of a spice/baking cabinet as my parents' house). I used sea salt in place of regular salt, skim milk in place of the nondairy and skipped the vanilla and baking soda. I was a little nervous about missing out on some key ingredients, but the cookies were still a success and tasted really yummy!
However, I would advise against the sea salt idea and stick with regular salt when you bake because I could definitely taste the grainy salt in my finished cookie.
One more note before I go. Yes, there is a substantial amount of added sugar in these cookies but I have cut the sugar almost in half when using a sweeter nondairy milk (like vanilla almond milk). Don't forget the applesauce adds a hint of extra sweetness too!
